  2. I noticed you used a gelatin egg in one of your recipes. Have you ever tried to incorporate them into a zucchini or squash pancake? Mine thus far just turn out glumpy 😦

    • Egg replacements are a tricky thing – they work well with some recipes and work badly with others…. Where they work, you can bet that the person who devised the recipe tested it extensively (in the case of my recipes me!), but substitutions do not always work… I doubt they would work well in a squash or zuch pancake because they do not have quite the same binding qualities that eggs have – you might need to add a binder such as tapioca starch or arrowroot powder to provide the binding capabilities… I used the properties of these flours in my rutabaga hashbrowns which helped bind the shredded vegetables together. Gelatin would not have done this becauae it melts at temperatures above body temp…. You could absolutely add gelatin or collagen for extra protein, but do not expect it to bind together a hot recipe like a fried fritter…..
